看来有必要介绍一下牛排的种类了。以下是牛排店常见的牛排种类,大致上
从贵到便宜排列。抱歉用英语,实在不知道中文名称。再便宜的就不适合做
牛排了。

filet mignons: most tender steak, very lean.
sometimes also called: filet, tenderloin steak.
different names for different size filets:
tournedos, medallions (smaller fillets)
if a filet mignon steak is cut very thick and grilled with grain
horizontally laid, it is called chateaubriand.

strip sirloins, from top of the loin after tenderlion is removed,
has the strongest beef taste. very popular steak.
also called new york strip, kansas city strip, shell steak.

ribeye:

also called delmonico, spencer, or prime rib filet.

porterhouse and t-bone: besically the same thing, except that porterhouse
is bigger, and has more tenderlion in it. both types are cut from the
lion after tenderlion and strip steaks are removed. so this type has
some tenderlion and some strip steak, separated by a t-shape bone.

top sirlon: center of the sirlon.
